Roast Arctic Salmon
Salmon is one of the healthiest fish available and the Arctic variety we use from the Faroe Islands is some of the best quality out there.
The remote location of the islands, with their pristine, cool, clear waters and steady sea temperatures and their strong currents and accessible fjords, provide the perfect conditions for the fish, which are fed on natural feed, raised in pollution free waters and able to swim naturally in spacious ocean cages.
All this makes for extremely tasty and succulent salmon.
We serve the dish with charred asparagus from Claremont Farm in Cheshire, the tenderness of the luscious green spears pairing perfectly with the crispy skinned fish.
It also comes with a smooth, creamy smoked garlic mayonnaise made from bulbs of garlic that have been smoked over hickory wood, the slow smoking process really locking in the flavour.
Garlic has been used throughout history as both food and medicine and is rich in antioxidants, adding another health benefit to this simple, beautifully cooked dish.
